The Plant Code: A Safety Shortcut
\nNext to the Julian date is a \u201cP\u201d code\u2014like P1021. That\u2019s the processing plant. Sounds useless until a salmonella recall hits and you realize you have no clue where your eggs came from.<\/p>\n

If you want chickens that actually roam, look for pastured eggs. Their yolks are deep orange, almost like cracking open a tiny sun. They taste richer too\u2014maybe psychological, maybe not, but I\u2019m convinced.<\/p>\n
USDA Grades: The Egg Report Card
\nEggs also come with USDA grades\u2014AA, A, and B.<\/p>\n
AA: the overachievers\u2014firm whites and perfect yolks<\/p>\n
A: still excellent<\/p>\n
B: rarely sold in regular grocery stores<\/p>\n
When I fry or poach, I choose AA. When I bake, I don\u2019t bother.<\/p>\n
The Moment Everything Clicked
\nOne Sunday, I made scrambled eggs. Simple. Easy. Lazy. But the eggs turned out watery and flavorless. I checked the carton: 36 days old. Not expired\u2014just tired.<\/p>\n
