They taste richer too\u2014maybe psychological, maybe not, but I\u2019m convinced.<\/p>\n<p>USDA Grades: The Egg Report Card<br \/>\nEggs also come with USDA grades\u2014AA, A, and B.<\/p>\n<p>AA: the overachievers\u2014firm whites and perfect yolks<\/p>\n<p>A: still excellent<\/p>\n<p>B: rarely sold in regular grocery stores<\/p>\n<p>When I fry or poach, I choose AA.
